Apricot tahini balls

If you're like me, you love a good (healthy) sweet treat every now and again. I get sick of the traditional cacao 'bliss balls' that seem to be everywhere now.

These apricot and tahini balls are just sweet enough, but have the earthy tones of the tahini, which also leaves you satisfied and able to stop at one (maybe?!)

Super easy and quick, these are a weekly hit in my home.

Makes around 6 - 8 balls

Ingredients

3 tablespoons of tahini (more or less to adjust to taste)

1/2 to 3/4 cup of dried apricots

1/4 cup of shredded coconut (or more if required to thicken mixture)

1 teaspoon of honey (optional, to taste)

Sesame seeds for rolling

Method

In a stick blender or good quality food processor, combine the tahini and apricots until apricots are chopped finely. Add coconut and continue to process, until the mixture is thick and good for rolling. Add the honey now if you are using it.

Shape mixture into balls and roll in sesame seeds. Et voila! 

Refrigerate before eating. Store in an air tight container.
