Baby Heirloom Tomato & Basil Salad
Summer time delivers tomatoes bursting with flavour, and heirloom tomatoes are my absolute favourite.
There are several iterations of heirloom tomatoes. Commercially available heirlooms are a variety of tomato introduced prior to 1940 that are open-pollinated, while family heirlooms are seeds that have been passed down for several generations through a family of tomatoes.
Regardless of the variety you can get, you are guaranteed that they will be absolutely delicious. Due to their sweetness, heirlooms are best simply prepared. Experiment with different salts to draw out the flavours and top with fresh herbs for a deliciously light summer salad.
1 punnet of baby heirloom tomatoes, or 2 - 3 large heirlooms
Sea salt (I used smoked sea salt in this recipe)
Freshly cracked black pepper
Good quality extra virgin olive oil
Wash and chop tomatoes.
Drizzle liberally with olive oil, and top with fresh basil, salt and pepper. Toss to combine and serve immediately.
