Cacao Coconut Roughs
Everyone loves a sweet treat now and again. These cacao coconut roughs are the perfect foil for an after dinner dessert or mid-afternoon snack.
The natural sweetness of the coconut works divinely with the cacao. Mix in some coconut oil and a touch of rice malt syrup and you've got yourself a bliss bomb.
Makes around 8 coconut roughs
Around 2 cups of shredded coconut (desiccated coconut)
2 heaped teaspoons of raw cacao
1/2 cup of coconut oil, melted
1 - 2 tablespoons of brown rice syrup (depending on how sweet you like it)
Combine all ingredients in a mixing bowl and stir to combine thoroughly.
Using your hands, form 8 ball or flat shapes with the mixture. Refrigerate to set for around 1 hour before eating.
Store in an airtight container in the fridge for up to 2 weeks.
