Carrot Top Pesto

I love a good pesto. I also love reducing food waste. When these two things are magically married together, I am in food heaven. Enter: carrot top pesto.

Next time you pick up a bunch of big, juicy carrots at your farmers' market with their tops on, instead of throwing them out, chop, wash and reserve for this delicious pesto.


Around 1 cup of washed carrot tops

1/2 cup of fresh basil

3 tbs of pine nuts

1 clove of garlic, smashed

Sea salt

1/2 cup of extra virgin olive oil


Combine all ingredients in a food processor and process until smooth.

Enjoy on fresh crusty bread, with vegetable crudites or on top of a salad or roasted vegetables.
