Chocolate Chia Pudding
If you’re anything like me, you are a breakfast fiend. Like that meme, I love sleep because it’s like a time machine to breakfast! It goes without saying therefore that brekkie should not only taste good, it should also be a powerhouse of nutrients to help power you through your day (or at least until lunch!)
Chia seeds are a very nutrient-dense little seed. Not only are they the highest plant-based source of protein known to man, on a gram-by-gram basis, they have more iron than spinach and more calcium that milk.
My chocolate chia pudding has been my go-to breakfast lately. Super easy to make, with only 4 ingredients. The other bonus is it can be made ahead of time, and in individual tubs to grab and go if you are one of those people who eats breakfast at their desk.
- 1 ½ tablespoons of chia seeds
- 1 ½ heaped teaspoons of cacao
- 1 tablespoon of goji berries
- ½ teaspoon of cinnamon
Combine all ingredients in a small bowl or sealable tub and mix with water, stirring until ingredients are absorbed and you have a more liquid-y texture and not a paste. It won’t hurt if you are generous with the amount of water you use, as chia seeds can absorb up to four times their weight in water (hence why they keep you full for a long time as they expand in your stomach). Store in the fridge overnight and top with a generous dollop of almond butter and some chopped strawberries for extra nutrients. A sprinkle of coconut also adds a delicious element.
If you find the pudding itself a little bland, feel free to switch the water out with coconut water for some sweetness, or alternatively try coconut milk to add both a sweetness and depth of flavour.
