Grilled avocado with zingy tomato salsa
Everyone loves a good avocado, but have you ever grilled this creamy fruit? If the answer is no, I highly suggest you do it - right now!
Grilling works to enhance the already complex flavours of avocado. The addition of the zingy lime salsa compliments this fruit. Pair it with a salad and you've got yourself a light, but extremely satisfying meal.
1 small avocado, halved
Handful of mixed cherry tomatoes
1 tablespoon of red onion, finely chopped
Juice of lime
A glug of extra virgin olive oil
Freshly cracked pepper
Wash and finely chop the cherry tomatoes and place in a small bowl. Add sliced onion, olive oil, lime juice, salt and pepper.
Brush flesh of avocado with olive oil and place on a hot grill for around 2 minutes, until grill marks appear. Flip avocado to skin side, briefly charring the skin.
Top avocado halves with salsa mix and place on a plate along with a handful of rocket leaves. Drizzle with olive oil and serve immediately.
