Grilled peach & avocado salad

Summer time calls for grilling and it's easy to feel left out of the fun if you're not a big meat fan. Sometimes things just taste better grilled, and never have I known this to be the case more than with delicious summer peaches and creamy avocado. Wow - what a flavour combination! 

Grilling the peaches seems to intensify their sweetness, resulting in a slightly caramelised finished. The avocado takes on an almost smoky flavour when grilled, making it the perfect foil to temper down the gooey-ness of the peaches.

A light limey dressing draws this salad all together, presenting one amazingly healthy summer delight. 

Serves 1. 


For the salad

1 slightly firm peach (I used donut peaches but you can use any variety. Just make sure they are not too ripe, as they will stick to the pan and look too gooey), sliced into wedges

1/2 slightly firm avocado (same deal as above)

A few cherry tomatoes, halved 

1 tbs of finely chopped red onion

Salad leaves

For the dressing

1 garlic clove, smashed

Juice of 1 lime

About 1 - 2 tbs of extra virgin olive oil

Sea salt and cracked pepper


Preheat the grill (or griddle) to high heat. In the meantime, prepare the dressing by whisking all ingredients together and let it stand so the garlic can infuse into the oil. 

Prepare the avocado, peach wedges and tomatoes by brushing the top sides with olive oil and seasoning with salt and pepper. 

Place all on the grill, oiled side down and grill for around 2 - 3 minutes, checking to ensure nothing is burning or overcooking. 

When ready, assemble on a plate with the salad leaves and drizzle the dressing over. Sprinkle the red onion over the avocado and season again if necessary. Serve immediately.
