Coconut Passionfruit Bircher Parfait

There aren't many flavours that exemplify summer more than passionfruit and coconut. This breakfast parfait is the perfect combination of both - light and floral, yet satisfying and dense to keep you full until lunch. 

Make this overnight for a quick breakfast fix in the morning.


1/2 cup of coconut yoghurt

2 fresh passionfruit

3 tablespoons of oats

1 teaspoon of chia seeds

2 tablespoons of coconut flakes

1 tablespoon of water


In the bottom of a glass or jar, combine the 2 tablespoons of oats with the chia seeds and the water. Stir to combine. 

Layer with 2 tablespoons of coconut yoghurt and squeeze fresh passionfruit on top. Build another layer of coconut flakes then continue with more coconut yoghurt and passionfruit. Top with a sprinkling of more oats, more passionfruit and more coconut flakes.

Refrigerate, covered, over night. Eat in the morning.
