Power greens salad

If you find yourself in need of a good injection of greens, but don't want to face a bland bowl of leaves, try whipping up this power greens salad. 

Quick and simple, this meal will be ready to go in 10 minutes, and will leave you satisfied for hours.

Serves 1

Ingredients

1/2 head of broccoli, cut into florets

Handful of green beans, topped

Handful of snap peas, shelled

Handful of fresh coriander (cilantro)

2 tablespoons of shredded coconut

Sesame oil for drizzling

Tamari (gluten-free soy sauce) for drizzling

Spinkle of black sesame seeds

Pinch of dried chilli (optional)

Method

Bring a large pot of water to boil and steam all vegetables until tender, around 4 minutes. 

Rinse under cold water to revive, and allow to cool to room temperature. 

Combine vegetables in a bowl and drizzle with sesame oil and tamari. Top with coconut, sesame seeds and fresh coriander. Season with salt and pepper and add a touch of chilli flakes to add some spice.
