I am always in my kitchen, inventing new recipes (or at least trying to!) or searching the internet for new and tasty new morsels to whip up. This recipe for cauliflower pizza base came from the gorgeous Jessica Sepel on her blog.
This recipe is super easy to whip up, with minimal ingredients and is the perfect alternative to a gluten-laden, carb-heavy traditional pizza base:
- ½ head of cauliflower
- 1 egg
- ½ red onion, chopped
- 1 tablespoon of olive oil
- Fresh rosemary, chopped
- Sea salt and pepper, to taste
Preheat oven to 180 degrees C.
Pulse the ½ cauliflower head in the food processor until it has a rice consistency.
Place a tea towel around the cauliflower ‘rice’ and squeeze out as much liquid as you can. This endures you will get a nice, crispy base.
Mix the egg, sliced onion, rosemary, olive oil and salt and pepper together with the cauliflower.
Once mixed, flatten the mixture on a lined tray and bake in the oven for around 20-25 minutes until firm and slightly browned.
Top base with ingredients of your choice and pop the pizza back in the oven for another 10-15 minutes. When cooked, slice into pizza slices and serve immediately!
