Love rice but hate the carbs and the starch? Thankfully it is possible to make an easy and delicious swap – with cauliflower.
I have previously posted a couple of recipes that use cauliflower rice as a base. Check out my rice-free cauliflower risotto recipe here, or my cauliflower pizza base here. I have never actually posted on how to make the stuff though, so here it is:
- 1 head of cauliflower
Chop cauliflower into florets and place into your food processor. You may have to do this in batches, depending on the size and strength of your food processor.
The cauliflower will transform into a rice-like consistency.
Use this instead of rice to make traditional fried rice, Indian spiced rice, or any other form. Serve as an accompaniment to a main meal, or else use as suggested above, in risotto or as a pizza base. With around only 30 calories per cup, this is a super healthy, gluten-free, grain-free and vegan alternative to the original, with a much better nutritional profile.
