Cilantro is one of many divine herbs you will find at your farmers' market at the moment. I picked up a ginormous bunch last week, and needed to find a delicious way to use it up en masse.
This salsa verde makes a great accompaniment to fish tacos, or any other recipe where cilantro is generally used. It works particularly well with seafood, but also is great as a pesto to spread on sandwiches, burgers, or as a salad dressing.
Cilantro salsa verde
1 bunch of fresh, washed cilantro (coriander) (roots and thick stems removed)
2 tablespoons of fresh lime juice
2 tablespoons of filtered water
2 tablespoons of olive oil
Combine all ingredients in a blender and blend until pureed. Set aside for some time to let the flavours meld together.
Keeps in the fridge in an airtight container for up to 7 days.
