Warmer weather means lighter meals. Gone are the days of root vegetables, soups and stews. Enter the humble salad.
The best salads are always the most simple. The more you add to a salad, the more each element loses a little bit of its power on the palate.
When making a salad, it's also important to consider which flavours are complimentary and balance each other out. This watermelon and feta salad does just that, combining the sweetness of the melon with the salty, creamy taste of the feta. The addition of the mint adds a freshness that leaves you feeling light and fresh!
Watermelon and feta salad
2 handfuls of fresh arugula (rocket)
1 cup of watermelon, cut into inch squares
Good quality feta cheese
2 spring onions, chopped finely
Handful of fresh mint leaves, torn into pieces
2 tablespoons of extra virgin olive oil
1 tablespoon of balsamic vinegar
Sea salt and pepper, to taste
Wash and dry arugula in a salad spinner and place into a large salad bowl.
Add the watermelon, spring onions and mint.
In a small bowl, whisk together the EVOO and balsamic. Pour on top of the salad and toss to coat.
Crumble the feta over the salad then toss again to combine. Season with salt and pepper and enjoy!
