Paprika zoodle salad

Zucchini is just the vegetable that keeps on giving, and there are endless ways to zoodle them to add to delicious salads. This dish is one of my favourite summer meals. Light enough to not feel weighed down, but filling and flavoursome at the same time. Super simple too - this baby can be whipped up in under 5 minutes.

Serves 1


1/4 rockmelon, sliced

1/2 avocado

1zucchini, spiralised into zoodles (if you don't have a zoodle machine, you can make zucchini ribbons with a vegetable peeler)

Fresh coriander (cilantro)

Smoked paprika

Sesame seeds

Olive oil

Sea salt


Prepare all ingredients as above. Before adding the avocado, dip each slice into the paprika followed by the sesame seeds.

Drizzle liberally with olive oil and season with salt. Et voila! Lunch is ready!
