Peach & Macadamia Super Smoothie

Peaches, to me, are the epitome of summer. Their intoxicating smell fills my kitchen whenever my fruit bowl is loaded with these juicy beauties. What better way to use them therefore, than as the sweetness in a smoothie. 

In this smoothie, the sweet flavour of the peach is offset perfectly by the creaminess of the macadamia butter. It is the ideal balance of light and heavy, and is definitely enough to keep you full until lunch!

Ingredients

1 ripe peach, cut into small pieces

2 tbs of macadamia butter (you can find this in health food stores, or make your own by blending macadamia nuts in a high powered blender). Cashew butter or almond butter works well too.  

1 cup of almond milk (or you can use this macadamia and almond milk from the New York Times)

Ice

Method

Combine all ingredients in a blender and blend on high until smooth. Serve immediately.
