Rainbow salad

Even though the weather is cooling down, I am desperately clinging on to summer, in a way that a young child clings to its mother on the first day of school.

While the summer produce is rapidly dwindling at the farmers' market, radishes, tomatoes, carrots and kale still make for a strong, raw, summery salad. 

Here is a simple salad that you can throw together with your left over summer items. 

 

Ingredients

1 cup of lacinato kale (or any other variety), washed and roughly chopped

2 large cherry tomatoes, sliced finely

1 large watermelon radish, sliced finely

1 carrot, finely sliced

2 tbs of hummus (store bought or home made)

1/4 avocado, sliced

Extra virgin olive oil

Sea salt & pepper

 

Method

Wash kale and prepare vegetables as above.

Combine in a bowl and drizzle with olive oil. Dollop on hummus and top with avocado. Add an extra drizzle of olive oil and season with salt and pepper.
