Simple Caprese Salad
The best food is simple food, and it doesn't get much more simple than this delicious Italian Caprese salad. Throw this together as an appetiser when entertaining and your guests will be singing your praises until kingdom come!
The key to making this dish work is the quality of your ingredients. Choose ripe, juicy tomatoes and the freshest mozzarella you can get your hands on. You can often source good quality mozz at Italian specialty stores. If you're in New York, it is made fresh daily onsite at Eataly. Good quality olive oil is also a must for this recipe.
1 - 2 large tomatoes. Heirloom tomatoes are perfect in the summer time.
1 ball of fresh mozzarella
Good quality extra virgin olive oil
Sea salt and cracked pepper
Wash tomatoes and slice into 1/2 inch slices.
Slice mozzarella into similar sized pieces.
Assemble on a plate or serving tray, intertwining one piece of tomato and one piece of cheese etc. Top with fresh shredded basil leaves and drizzle liberally with extra virgin olive oil. Finish with cracked pepper and sea salt to taste.
