Summer peach & arugula salad 

Farmers' markets heave with fruit in the summer time. Berries, cherries and stone fruit fill the stands, disseminating a heavy, sweet scent through the air.

Fruit in salads works when you pair it with the right ingredients. In this recipe, the sweetness of the peach is offset perfectly by the bitterness of the wild arugula and the mild tang of the scallions.

Serves 1. 


1/2 bunch of wild arugula, washed and dried

1 ripe peach, sliced (skin on or off, depending on your preference)

1 - 2 ripe tomatoes ( love heirloom tomatoes), chopped 

1 - 2 scallions (spring onions), chopped finely

Extra virgin olive oil

Balsamic vinegar

Sea salt

Cracked pepper


Combine salad ingredients in a large salad bowl. 

Dress with a generous splash of good quality olive oil and balsamic vinegar and season with salt and pepper. Toss to coat and eat!
